Dassai beyond was created to be above Dassai 23. Not just competing by rice polishing ratio, but also every single ingredient and process was improved to make this sake.Crisp and complex with a nose of fruit blossoms and a extremely clean long finish. Using “Yamada-Nishiki” rice, known as a king of sake rice, this brewery keep this sake in 1800ml bottles for 10 years and after that, moved sakes into 720ml bottles to ship out. This is a medium dry sake with very smooth and clean finish. The 10-year aging process softens the alcohol, resulting in a smoother taste. Very rare and not for sale in Japan.
